I have been obsessing about cookies. In particular thumbprint cookies. We make a small walnut shortbread cookie about the size of a quarter and then top with icing. These typically are made during the holiday's, especially Christmas. We top these quarter size nuggets of goodness with chocolate, cherry, and mint icing and they have been a local favorite for quite some time.
Lately, though I have been thinking about making them a regular part of our baked goods and topping them with different flavored icings like lemon, strawberry, raspberry (O.K. any berry), or other flavors that are suitable for the season. But of course I am one person, one baker who - well- loves bakery. Those of you who do shop our store or have received them from our online store let me know what you think. And feel free to comment on what toppings you would like to see/taste on our thumbprint cookies.
As an aside, we included them in on our St.Patrick's On-line specials/packages and one of our loyal customers wrote a little article about them. She thought they were spot on good!
